SEbaseball.com (a Rivals.com affiliate for college baseball) projects us making the field of 64, going to Coral Gables for a regional with Miami, FGCU and Cal.

Not much has changed since last week's projection, just this overall regional fell lower in the overall seeding.

it is a very tough bracket, but you see the Gainesville (8 overall seed) that the winner of our regional would play? that is cautiously easy and if we could make it out of our regional, a super regional matchup with the winner of that would be doable

Is it just me or doe sit always seem that the Coral Gables bracket is stacked??

It is and we usually don't do well in that bracket.  When they shipped us out of state, we won the regional.  We have struggled in Florida, but there are so many good teams in Florida.  We could be a top 15 team (not saying we are), and never get past the regional because of all the teams in Florida that are good.  The Gators are up to #2 in RPI so that's no picnic up there either.
