I believe the problem is Chartwells has a contract for the deck and tower so somehow we got stuck with the worst options.

But here's the thing. The vendor or small business (or even large business, for that matter) has to incur double the operation and double the cost to have another location. Are they going to double the revenue?
That's the decision.
If the stadium is full, it may be a good investment for the vendor. If the stadium is 3/4 empty, probably not a good investment.
I think a lot of the change every year on food choices will be dictated by whether a vendor actually makes money. Honestly, on the visitor side, there must be some games that are slim pickings. Every new vendor coming thinks they will kill it. They have that dream. The reality may be different.
We need to win football games for vendors and businesses who cater to FAU. There is a lot at stake. There is a lot more to it than just hoping we have vendors to sell things. The vendors and small businesses who cater to FAU need to make money or they go away and we start over the next year finding new vendors and businesses. Vicious cycle.

so big name draw events like Miami they had all concessions running. I havent been to the bowl game yet, but do they have all concessions open during that?

For visitors sake, I had hoped that our stadium would reflect our local South Florida culture to the best of our ability. Tomasso's, Mississippi Sweets and BC Tacos certainly fit that bill, as would craft beers from Funky Buddha, Due South, etc. I hope this is something we continue to endeavor to do.
I've been to stadiums for big name teams in different areas and it's depressing to see every vendor more or less sell the same burger, hot dog, nachos, personal pizza.
